A straightforward pour-over.
A scale makes it easier to repeat the cup you like. This is our starting recipe for a paper-filter dripper; the exact finish time will vary with your brewer.

Recipe
- 24 g coffee
- 384 g brewing water
- Medium grind
- Water around 200°F
- Target total brew time roughly three to four minutes
Equipment
Paper-filter dripper, matching filter, kettle, scale, timer, mug or server. Choose a vessel large enough for the brew.
Steps
- Rinse the paper filter with hot water, then discard that water.
- Add 24 g ground coffee and level the bed.
- Start the timer and pour 50 g water over the grounds. Let them sit for about thirty seconds.
- Pour slowly until the scale reaches 200 g. Let the water drop slightly.
- Continue to a total of 384 g, keeping the grounds evenly wet.
- Let the brewer drain, remove it, and stir the finished coffee.
Adjusting the cup
If the cup tastes sharp and thin, try a slightly finer grind next time. If it tastes dry and harsh, try slightly coarser. Keep the recipe the same while you make that one change. A very slow drain can also mean the filter is clogged or the grind is too fine.
